Pad Thai, noodles and rice
Noodles and rice are part of the daily diet in Thailand. Here, they are eaten several times a day in different forms: as a side dish in soups or curries, as a main course, for example stir-fried rice, or even as a dessert, for example mango sticky rice.
In this book, you will find savoury or sweet and sour recipes that are also mainly one-course meals. We've collected some of your favourite recipes here, such as Pad Thai or fried rice with pineapple.
But we have also thought of those who are already familiar with Thai cuisine and want to discover more. Most of the recipes in this book are extremely popular in Thailand but not very well known abroad. This is an opportunity to treat yourself and your friends.
Finally, we have also added a few recipes typical of our region, such as Koh Samui Pad Thai, rice salad with herbs and chicken with rice and spices in the southern style.
We hope you will enjoy making these dishes. To help you do so, we have included some tips in the introduction (see next pages).
If you have any questions about recipes or ingredients, please write to us and we will be happy to answer them.
Because cooking is a pleasure to share, all recipes are for two people. They are moderately spicy by Western standards.
